Ingredients
  

The Zucchini Bites
  • 2 medium Zucchini Sliced into 1/2 inch rounds
  • 1/2 cup (60g) All-purpose flour
  • 2 large Eggs Beaten
  • 1.5 cups (90g) Panko breadcrumbs
  • 1/4 cup (25g) Parmesan cheese Finely grated
  • 1 tsp Dried Oregano
  • 1 tsp Cracked Black Pepper Coarsely ground
Creamy Garlic Sauce
  • 1/2 cup (120ml) Mayonnaise
  • 1/4 cup (60ml) Greek Yogurt Plain, non-fat or full fat
  • 2 cloves Garlic Minced
  • 1 tbsp Lemon Juice Freshly squeezed
  • 1 tbsp Fresh Parsley Chopped for garnish

Equipment

  • 1 Air Fryer Any standard basket or oven-style air fryer.
  • 3 Shallow Bowls For the dredging station.

Method
 

Prepare the Zucchini
  1. Slice zucchini into 1/2-inch rounds. Sprinkle with salt and let sit on paper towels for 10 minutes to remove excess moisture. Pat dry.
Dredge and Coat
  1. Place flour in one bowl, beaten eggs in the second, and combine Panko, parmesan, herbs, and pepper in the third.
  2. Dip each zucchini round in flour, then egg, then press firmly into the Panko mixture until thickly coated.
Air Fry
  1. Arrange in a single layer in the air fryer basket. Cook at 400°F (200°C) for 8-10 minutes, flipping halfway through, until golden-brown and crispy.
  2. Whisk sauce ingredients together. Garnish hot bites with parsley and serve in a white ceramic bowl.

Notes

Ensure the air fryer is not overcrowded to maintain crispness.
For a dairy-free version, use nutritional yeast instead of parmesan.
