Ingredients
  

Cookie Dough
  • 1/2 cup (115g) Unsalted Butter Softened to room temperature
  • 1/2 cup (100g) Granulated Sugar
  • 1/2 cup (100g) Light Brown Sugar Packed
  • 1 large Egg Room temperature
  • 1/2 cup (120ml) Mashed Ripe Bananas About 1-2 medium bananas
  • 1 tbsp (15ml) Vanilla Extract
  • 2 cups (250g) All-Purpose Flour
  • 1 tsp (5g) Ground Cinnamon
  • 1/2 tsp Baking Soda
  • 1/4 tsp Baking Powder
  • 1/2 tsp Salt

Equipment

  • 1 Stand mixer or hand mixer Used for creaming butter and sugar.
  • 2 Baking Sheet Line with parchment paper for best results.

Method
 

Baking Instructions
  1. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy (about 3 minutes).
  2. Mix in the egg, mashed bananas, and vanilla extract until fully incorporated. The batter will be pale golden-tan.
  3. In a separate bowl, whisk together flour, cinnamon, baking soda, baking powder, and salt. Gradually add to the wet ingredients.
  4. Scoop 2-tablespoon mounds of dough onto prepared baking sheets. Bake at 350°F (175°C) for 10-12 minutes until edges are golden-brown and tops are matte.

Notes

Use bananas with plenty of brown spots for the best flavor and moisture.
Don't overmix once you add the flour to ensure a soft, cake-like texture.
