- In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy (about 3 minutes).
- Mix in the egg, mashed bananas, and vanilla extract until fully incorporated. The batter will be pale golden-tan.
- In a separate bowl, whisk together flour, cinnamon, baking soda, baking powder, and salt. Gradually add to the wet ingredients.
- Scoop 2-tablespoon mounds of dough onto prepared baking sheets. Bake at 350°F (175°C) for 10-12 minutes until edges are golden-brown and tops are matte.
Notes
Use bananas with plenty of brown spots for the best flavor and moisture.
