  • 1 cup unsalted butter 227g, softened to room temperature
  • 1 package instant banana pudding mix 3.4 oz / 96g dry mix
  • 4 cups powdered sugar 480g, sifted
  • 2-3 tablespoons heavy cream 30-45ml, as needed
  • 1 teaspoon vanilla bean paste 5ml, for flecks
  • 1/8 teaspoon fine sea salt to balance sweetness
  • 24 mini vanilla wafer cookies for garnish

Method
 

Preparation
  1. In a stand mixer, beat the softened butter for 3-5 minutes until pale and fluffy.
  2. Lower speed and add the dry pudding mix, vanilla bean paste, and salt. Mix until combined.
  3. Add sifted powdered sugar one cup at a time, mixing on low then medium until smooth.
  4. Add heavy cream 1 tablespoon at a time until the frosting is thick, creamy, and pipeable. Whip on high for 30 seconds for a matte finish.
  5. Transfer to a piping bag and pipe swirls onto cupcakes in gold liners. Garnish each with a mini vanilla wafer at a 45-degree angle.

Notes

Ensure the pudding mix is 'instant' and not 'cook and serve.'
Sift the powdered sugar to avoid lumps in your piping tip.
