  • 1 tsp toasted sesame oil 5ml
  • 1 lb chicken breast 450g, cut into bite-sized pieces
  • 1 tbsp vegetable oil 15ml, for searing
  • 1/2 cup mayonnaise 120ml
  • 1/4 cup Thai sweet chili sauce 60ml
  • 1 tbsp Sriracha 15ml, or to taste
  • 2 green onions thinly sliced
  • 1 tsp sesame seeds mixed black and white
  • 1/2 tsp dried chili flakes

  • 1 Large Skillet For searing the chicken
  • 1 Large pot To boil noodles
  • 1 Mixing Bowl For the Bang Bang sauce

Method
 

Prepare the Components
  1. Cook the wheat noodles in salted boiling water until al dente. Drain and toss with sesame oil to create a translucent, glossy glaze.
  2. Whisk together mayonnaise, sweet chili sauce, and sriracha until a thick, opaque orange-pink sauce forms.
  3. Heat oil in a skillet over medium-high heat. Sear chicken pieces until fully cooked with visible golden-brown charred edges.
  4. Divide noodles into bowls, top with seared chicken, and smother with the Bang Bang sauce. Garnish heavily with scallions, sesame seeds, and chili flakes.

Notes

Use a high-heat oil like avocado or vegetable oil for the best chicken char.
If the sauce is too thick, thin it with a teaspoon of warm water.
