Preparation and Blind Baking
- Preheat oven to 425°F (220°C). Place flatbreads on a baking sheet.
- Bake the plain flatbreads for 3-4 minutes until they begin to show a charred, crispy texture.
Assembly and Final Bake
- Spread a layer of thick glossy barbecue sauce over the flatbread. Top with a generous layer of mozzarella cheese.
- Distribute the roasted diced chicken breast evenly over the cheese.
- Bake for 5-7 minutes. Switch to broil for 1 minute until the cheese has toasted golden-brown spots.
- Remove from oven and top with thinly sliced red onions and fresh chopped cilantro.
