  • 2 pieces Flatbread or Naan Rectangular preferred
  • 1/2 cup (120ml) Barbecue Sauce Thick, dark, and glossy variety
  • 2 cups (226g) Mozzarella Cheese Shredded, low-moisture
  • 1.5 cups (210g) Roasted Chicken Breast Diced into bite-sized chunks
  • 1/4 cup (40g) Red Onion Thinly sliced raw
  • 2 tablespoons (8g) Fresh Cilantro Chopped

Equipment

  • 1 Baking Sheet or Pizza Stone Preheating a stone yields a crispier crust.
  • 1 Chef's Knife For dicing chicken and slicing onions.

Method
 

Preparation and Blind Baking
  1. Preheat oven to 425°F (220°C). Place flatbreads on a baking sheet.
  2. Bake the plain flatbreads for 3-4 minutes until they begin to show a charred, crispy texture.
Assembly and Final Bake
  1. Spread a layer of thick glossy barbecue sauce over the flatbread. Top with a generous layer of mozzarella cheese.
  2. Distribute the roasted diced chicken breast evenly over the cheese.
  3. Bake for 5-7 minutes. Switch to broil for 1 minute until the cheese has toasted golden-brown spots.
  4. Remove from oven and top with thinly sliced red onions and fresh chopped cilantro.

Notes

Always use a thick BBQ sauce to prevent a soggy crust.
Broil at the very end for the best golden cheese spots.
