Ingredients

Primary Ingredients
  • 1 lb Smoked Sausage 450g, thick-sliced into rounds
  • 1.5 cups Long-Grain White Rice 300g, uncooked
  • 1 can Black Beans 15oz/425g, rinsed and drained
  • 1 large Green Bell Pepper diced
  • 2.75 cups Chicken Broth 660ml, low sodium
  • 2 tbsp Tomato Paste 30ml, for the sauce base

Equipment

  • 1 Cast Iron Skillet 12-inch seasoned skillet preferred
  • 1 Wooden spoon For scraping the fond

Method

Preparation
  1. Heat oil in cast iron skillet. Add sausage slices and cook until dark brown char marks and caramelized surfaces appear.
  2. Add green bell peppers to the skillet. Cook until tender, scraping the bottom of the pan.
  3. Add rice and tomato paste, stirring to coat the grains in the savory reddish-brown seasoning.
  4. Pour in broth and black beans. Return sausage to the pan. Cover and simmer on low for 18-20 minutes.
  5. Remove from heat, let rest 5 minutes. Fluff with a fork and garnish with fresh cilantro.

Notes

Use a heavy lid to trap steam for the fluffiest rice.
Ensure the sausage is sliced at least 1/2 inch thick to prevent drying out during the sear.
