  • 12 large Jalapeños Halved and seeded
  • 8 oz (225g) Brie Cheese Sliced into strips
  • 1/2 cup (120ml) Blueberry Jam Thick and glossy preserves
  • 1/2 cup (60g) Panko Breadcrumbs For the crust
  • 2 tbsp (30ml) Salted Butter Melted
  • 1/4 cup Fresh Blueberries Whole, for garnish
  • 2 tbsp Fresh Parsley Finely chopped

Equipment

  • 1 Baking Sheet Lined with parchment paper for easy cleanup.
  • 1 Small Spoon For de-seeding the jalapeños.

Method
 

Preparation
  1. Preheat oven to 400°F (200°C). Slice jalapeños in half and remove seeds.
  2. Roast peppers face down for 5-7 minutes until slight char marks appear.
  3. Flip peppers. Stuff with brie cheese and top with a spoonful of blueberry jam.
  4. Mix panko and butter. Sprinkle over the jam layer.
  5. Bake for 8-10 minutes until panko is toasted golden-brown and cheese is melted.
  6. Top with fresh blueberries and parsley flakes before serving.

Notes

Wear gloves when handling jalapeños to avoid skin irritation.
Use cold brie for easier slicing.
