Pasta Ingredients
  • 1 lb (454g) Penne Pasta Dried penne is best for holding the sauce.
  • 5.2 oz (150g) Boursin Garlic & Herb Cheese One full round.
  • 2 cups (300g) Cherry Tomatoes Whole, red cherry tomatoes.
  • 3 tbsp (45ml) Olive Oil Extra virgin is preferred.
  • 3 cloves Garlic Minced.
  • 0.5 cup (120ml) Pasta Water Reserved from the boiling pot.
  • 1 handful Fresh Basil Leaves Hand-torn.
  • 1 tsp Cracked Black Pepper Coarsely ground.

Equipment

  • 1 White rectangular ceramic baking dish Essential for even roasting and beautiful presentation.
  • 1 Large pot For boiling the penne pasta.

Method
 

Prep and Roast
  1. Preheat your oven to 400°F (200°C).
  2. Place Boursin cheese in the center of a ceramic dish. Add cherry tomatoes and minced garlic around it. Drizzle with olive oil.
  3. Bake for 25-30 minutes until tomatoes are blistered and cheese is charred on top.
Pasta and Sauce
  1. Boil penne in salted water until al dente. Reserve 1 cup of pasta water before draining.
  2. Smash the roasted cheese and tomatoes in the dish. Stir in 1/2 cup pasta water to create a creamy sauce.
  3. Toss the cooked pasta into the sauce until fully coated. Garnish with basil and pepper.
