Ingredients

Core Ingredients
  • 2 large Flour Tortillas 10-12 inch diameter
  • 4 large Eggs Whisked for fluffiness
  • 4 strips Thick-Cut Bacon Cooked until glistening and crispy
  • 1/2 cup (50g) Sharp Cheddar Cheese Shredded for melting
  • 1 tbsp (14g) Unsalted Butter For cooking eggs
  • 1/2 tsp Cracked Black Pepper Freshly ground
  • 1/4 tsp Kosher Salt To taste

Equipment

  • 1 Cast Iron Skillet For charring tortillas and searing
  • 1 Non-Stick Pan For the soft scrambled eggs

Method

Prepare the Fillings
  1. Place thick-cut bacon in a cold skillet over medium heat. Fry until the fat renders and bacon is glistening and crispy (about 8-10 minutes). Drain on paper towels.
  2. Melt butter in a non-stick pan over low-medium heat. Add whisked eggs and salt. Gently stir to create soft, large curds. Remove while slightly wet and top with cracked black pepper.
Assemble and Char
  1. Place flour tortilla over a gas flame or hot dry skillet for 10 seconds per side until subtle golden-brown char marks appear.
  2. Layer cheddar cheese, soft eggs, and bacon strips in the center of the tortilla. Fold in the sides and roll tightly.
  3. Place the burrito seam-side down in a hot skillet for 30 seconds to seal. Slice in half to show the cross-section and serve.

Notes

Tip: Don't overcook the eggs; they should be soft-curd for the best texture.
Tip: Use a serrated knife for the cleanest cross-section cut.
