Prepare the Fillings
- Place thick-cut bacon in a cold skillet over medium heat. Fry until the fat renders and bacon is glistening and crispy (about 8-10 minutes). Drain on paper towels.
- Melt butter in a non-stick pan over low-medium heat. Add whisked eggs and salt. Gently stir to create soft, large curds. Remove while slightly wet and top with cracked black pepper.
Assemble and Char
- Place flour tortilla over a gas flame or hot dry skillet for 10 seconds per side until subtle golden-brown char marks appear.
- Layer cheddar cheese, soft eggs, and bacon strips in the center of the tortilla. Fold in the sides and roll tightly.
- Place the burrito seam-side down in a hot skillet for 30 seconds to seal. Slice in half to show the cross-section and serve.
