  • 2 fillets Salmon approx. 6 oz (170g) each
  • 1/2 cup Dark Brown Sugar 110g
  • 1 tbsp Coarse Cracked Black Peppercorns 6g
  • 8 sprigs Fresh Thyme
  • 1 whole Lemon cut into wedges
  • 1 tbsp Avocado Oil 15ml
  • 1/2 tsp Kosher Salt 3g

Method
 

Prep the Salmon
  1. Preheat oven to 425°F (220°C) with a dark baking sheet inside. Pat salmon fillets completely dry with paper towels.
  2. Mix brown sugar with a tiny splash of oil to form a paste; rub generously over the top and sides of the salmon.
Roast
  1. Press cracked peppercorns into the sugar and top with thyme sprigs. Place on the hot baking sheet with lemon wedges.
  2. Roast for 10-12 minutes until the glaze is bubbling in a deep-amber color and salmon is flaky.

Notes

Use dark brown sugar for a deeper molasses flavor.
Ensure the oven is fully preheated for the best crust.
