Preparation and Initial Cook
- Pat the wings completely dry with paper towels. Toss with oil and sea salt until evenly coated.
- Place wings on a wire rack over a baking sheet. Bake at 400°F (200°C) for 35 minutes until skin starts to crisp.
Glaze and Finish
- In a saucepan, simmer brown sugar, pineapple juice, and soy sauce until reduced by half and glossy. Stir in pineapple chunks.
- Brush wings generously with the glaze. Broil for 2-3 minutes per side until charred, caramelized edges appear.
- Transfer to a bowl, pour over extra glaze, and top with scallions, sesame seeds, and chili flakes.
