  • 12 oz linguine pasta 340g
  • 1 lb chicken breast 450g, sliced into thin cutlets
  • 2 tbsp Cajun seasoning 30g, divided
  • 1.5 cups heavy cream 360ml
  • 4 cloves garlic minced
  • 1.5 cups mozzarella cheese 170g, shredded
  • 1 tbsp olive oil 15ml
  • 0.25 cup fresh parsley chopped
  • 1 tsp red pepper flakes optional for extra heat

  • 1 Large Skillet Used for searing chicken and building the sauce.
  • 1 Large pasta pot For boiling the linguine.

Method
 

Preparation
  1. Cook linguine in salted boiling water until al dente. Reserve 1/2 cup (120ml) of pasta water and drain.
  2. Season chicken with Cajun spices. Heat oil in a skillet and sear chicken until dark and charred (5-6 mins per side). Sliced into strips once rested.
  3. In the same skillet, sauté garlic, then add heavy cream. Scrape up charred bits to turn the sauce pale orange. Simmer until thickened.
  4. Stir in mozzarella cheese until melted and stringy. Toss in pasta and chicken. Garnish with parsley and red pepper flakes.

Notes

Use freshly grated mozzarella for the best cheese strings.
Adjust the spice level by increasing or decreasing the Cajun seasoning and red pepper flakes.
