Cajun Steak Pasta with Creamy Parmesan Sauce

  • 1 lb rigatoni pasta 450g
  • 1.5 lbs steak tips 680g, sirloin or ribeye
  • 2 tbsp Cajun seasoning 30g, divided
  • 2 cups heavy cream 480ml
  • 1 cup Parmesan cheese 100g, freshly grated
  • 2 tbsp fresh parsley finely chopped
  • 1 tsp cracked black pepper

  • 1 Large Skillet Cast iron preferred for the best sear.
  • 1 Pasta Pot

Method
 

Preparation
  1. Boil the rigatoni in salted water until just shy of al dente. Reserve 1/2 cup of pasta water and drain.
  2. Season steak tips with half the Cajun seasoning. Sear in a hot skillet with oil until a dark brown caramelized crust forms. Remove and set aside.
  3. In the same skillet, add heavy cream and remaining seasoning. Simmer and whisk in Parmesan until thick and glossy orange.
  4. Toss pasta and steak back into the sauce. Garnish with fresh parsley and black pepper.

Notes

Use room temperature steak for a better sear.
Always freshly grate your Parmesan to avoid a grainy sauce.
