  • 2 cups All-Purpose Flour 250g
  • 1 cup Unsalted Butter 227g, ice-cold and cubed
  • 1 tsp Sea Salt 5g
  • 1/4 cup Ice Water 60ml
  • 1 lb Ripe Red Tomatoes 450g, sliced
  • 8 oz Fresh Mozzarella 225g, sliced into rounds
  • 2 large Eggs
  • 1/4 cup Heavy Cream 60ml
  • 1 handful Fresh Basil Leaves Garnish
  • 1 tbsp Olive Oil For drizzling
  • 1/2 tsp Cracked Black Pepper

  • 1 Baking Sheet Or a pizza stone for a crispier bottom.
  • 1 Rolling Pin

Method
 

Prepare the Dough
  1. Whisk flour and salt; cut in cold butter until pea-sized crumbs form.
  2. Add ice water until dough forms; wrap and chill for 60 minutes.
Assemble and Bake
  1. Roll dough to 12 inches; spread egg/cream mixture in center; top with tomatoes and mozzarella.
  2. Hand-fold edges over filling; bake at 400°F (200°C) for 35-40 minutes until golden-brown.

Notes

Salt the tomatoes beforehand to prevent a soggy crust.
Use high-fat butter for the flakiest pastry layers.
