  • 1.5 lbs boneless skinless chicken thighs diced into 1/2-inch pieces
  • 2 tsp achiote powder for color and earthiness
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 2 tbsp orange juice freshly squeezed
  • 16 small yellow corn tortillas 4-inch size
  • 1/2 cup white onion finely minced
  • 1/2 cup fresh cilantro chopped
  • 4 large red radishes thinly sliced
  • 1/2 cup salsa verde pale green variety

Method
 

Preparation
  1. In a bowl, mix oil, achiote, cumin, paprika, and orange juice. Add diced chicken and toss to coat. Marinate for 20 minutes.
  2. Heat a skillet over medium-high. Cook chicken in batches until caramelized and cooked through (165°F).
  3. Place tortillas over an open gas flame or in a hot dry pan until charred brown spots appear on the edges.
  4. Double stack tortillas, add chicken, and top with onion, cilantro, radish, and a drizzle of salsa verde. Serve with lime.

Notes

Use a cast iron skillet for the best sear.
Double up on tortillas to prevent tearing from the juicy chicken.
