  • 1.5 lbs Chicken Breast Cut into 1-inch chunks (680g)
  • 2 medium Zucchini Sliced into rounds (400g)
  • 1 cup Cherry Tomatoes Whole (150g)
  • 1 cup Mozzarella Cheese Freshly shredded (113g)
  • 1 cup Sharp Cheddar Cheese Freshly shredded (113g)
  • 2 tbsp Olive Oil (30ml)
  • 1 tsp Garlic Powder (5ml)
  • 0.5 tsp Red Chili Flakes Adjust for heat preference
  • 2 tbsp Fresh Parsley Finely chopped

  • 1 12-inch Cast Iron Skillet Essential for high-heat searing and oven finishing.
  • 1 Chef's Knife

Method
 

Preparation
  1. Pat chicken chunks dry and toss with salt, black pepper, and garlic powder.
  2. In a cast-iron skillet, sear zucchini rounds in olive oil until visible char marks appear. Remove and set aside.
  3. Add chicken to the skillet, searing until golden brown on all sides. Remove and set aside.
  4. Add cherry tomatoes to the skillet, cooking until they blister and soften.
  5. Return chicken and zucchini to the skillet. Top with mozzarella and cheddar. Bake at 400°F (200°C) for 10 minutes.

Notes

Use a heavy skillet for the best char marks.
Freshly grate your cheese for a superior melt.
