  • 1.5 lbs chicken breast cut into 1-inch chunks
  • 3 medium zucchini sliced into rounds
  • 2 cups mozzarella cheese shredded
  • 2 tablespoons olive oil divided
  • 1 teaspoon red pepper flakes
  • to taste cracked black pepper and salt
  • 1/2 cup fresh basil leaves whole leaves for garnish

Method
 

Preparation
  1. Preheat oven to 400°F (200°C) and grease a ceramic baking dish with olive oil.
  2. Season chicken chunks with salt and pepper. Sear in a skillet with olive oil over medium-high heat until golden brown on the outside.
  3. Layer the seared chicken chunks and sliced zucchini rounds in the baking dish, alternating and overlapping them.
  4. Top with shredded mozzarella, red pepper flakes, and cracked black pepper.
  5. Bake for 20-25 minutes until the cheese is bubbly with golden toasted spots and zucchini is tender.
  6. Top with fresh whole basil leaves before serving.

Notes

Pat zucchini slices dry before layering to prevent excess moisture.
Use the broiler for 1-2 minutes if you want a deeper golden color on the cheese.
