  • 1 package Phyllo Pastry or Thin Puff Pastry Thawed if frozen
  • 8 oz (225g) Feta Cheese Cut into batons
  • 1/2 cup (115g) Unsalted Butter Melted
  • 1/2 cup (120ml) Honey Pure clover or wildflower
  • 1-2 tbsp Crushed Red Pepper Flakes Adjust to heat preference
  • 1 tbsp Extra Virgin Olive Oil For glossiness
  • 4-5 sprigs Fresh Thyme For garnish

  • 1 Baking Sheet Lined with parchment paper
  • 1 Small saucepan For infusing honey
  • 1 Pastry Brush For applying melted butter

Method
 

Preparation
  1. Combine honey and red pepper flakes in a small saucepan over low heat. Warm for 3-5 minutes until amber-toned. Stir in olive oil and set aside.
  2. Cut feta into 3-inch batons and pat dry with paper towels to ensure the rolls stay crispy.
  3. Brush pastry sheets with butter, place feta at one end, fold sides, and roll tightly. Ensure the seam is tucked.
  4. Preheat oven to 400°F (200°C). Place rolls on a baking sheet and bake for 15-18 minutes until golden-brown and blistered.
  5. Drizzle immediately with chili honey while hot. Top with fresh thyme and extra feta crumbles.

Notes

Tip 1: Use high-quality sheep's milk feta for a creamier melt.
Tip 2: Don't let the honey boil or it will become too sticky and lose its floral notes.
