Ingredients
  

Chicken & Marinade
  • 1.5 lbs Chicken Breast 680g, sliced into strips
  • 2 tbsp Avocado Oil 30ml
  • 1 tsp Chipotle Powder 5ml
  • 1 tsp Smoked Paprika 5ml
Bowl Base & Toppings
  • 2 cups Cooked White Rice 480ml
  • 1 can Black Beans 15 oz/425g, rinsed
  • 1 cup Sweet Corn 150g, charred
  • 1/4 Red Onion thinly sliced
  • 1/2 cup Fresh Cilantro 15g
Chipotle Sauce
  • 1/2 cup Sour Cream 120ml
  • 2 tbsp Adobo Sauce 30ml

Equipment

  • 1 Cast Iron Skillet Essential for dark grill marks.
  • 1 Small Whisk For the chipotle sauce.

Method
 

Cook the Protein
  1. Season chicken strips with spices. Heat oil in skillet over medium-high. Sear for 4 minutes per side until dark grill marks appear.
Prepare Vegetables
  1. Add corn to the hot skillet. Cook undisturbed for 2-3 minutes until charred edges develop.
Assemble
  1. Layer rice, then arrange chicken, beans, and corn in sections. Top with onions, cilantro, and a zigzag of sauce.

Notes

Pat chicken dry for better searing.
Soak onions in ice water to reduce sharpness.
