  • 6 cups broccoli florets approx 500g, bite-sized
  • 8 slices bacon approx 225g, thick-cut, cooked and crumbled
  • 1.5 cups sharp orange cheddar cheese 170g, finely shredded
  • 1/2 cup red onion 75g, finely diced
  • 1/2 cup sunflower seeds 65g, toasted
  • 1 cup mayonnaise 240ml
  • 3 tbsp granulated sugar 38g
  • 2 tbsp apple cider vinegar 30ml
  • 1/2 tsp salt 3g
  • 1/4 tsp black pepper 1g

Method
 

Preparation
  1. Fry thick-cut bacon in a skillet until dark-browned and crispy. Drain on paper towels and crumble into irregular bits.
  2. In the same skillet (wiped clean), toast sunflower seeds over medium heat for 2-3 minutes until fragrant.
  3. In a bowl, whisk mayonnaise, sugar, apple cider vinegar, salt, and pepper until the sugar is dissolved and the texture is glossy white.
  4. In a large white bowl, toss raw broccoli florets, diced red onion, shredded orange cheddar, and most of the bacon with the dressing.
  5. Top with remaining bacon and toasted sunflower seeds. Chill in the refrigerator for at least 1 hour before serving.

Notes

Use freshly shredded cheese for the best color and texture.
Ensure broccoli is completely dry before adding dressing.
