Coca-Cola Pork Loin with a Sticky Mahogany Glaze

  • 3 lb Boneless Pork Loin Center-cut (1.36kg)
  • 2 cups Coca-Cola Classic, not diet (480ml)
  • 1/4 cup Soy Sauce 60ml
  • 1/4 cup Brown Sugar 50g
  • 5 sprigs Fresh Rosemary Extra for garnish
  • 3 cloves Garlic Smashed
  • 2 tbsp Balsamic Vinegar 30ml

Equipment

  • 1 Large Skillet For searing the pork.
  • 1 Roasting Pan To bake the pork loin.
  • 1 Meat Thermometer To ensure 145°F internal temp.

Method
 

Preparation
  1. Season pork with salt and pepper. Heat oil in a skillet and sear all sides of the pork loin until a golden-brown crust with charred edges forms.
  2. Place pork in a roasting pan. Whisk Coca-Cola, soy sauce, brown sugar, and garlic; pour over meat. Add rosemary sprigs to the pan.
  3. Roast at 325°F (165°C) for 60-75 minutes, basting every 20 minutes, until internal temperature reaches 145°F (63°C).
  4. Remove pork to rest. Simmer pan juices in a saucepan for 10 minutes until a thick, glossy mahogany glaze forms. Slice and serve on a white platter.

Notes

Let the meat rest for 15 minutes to ensure succulent slices.
Use a white ceramic platter to make the dark mahogany glaze pop visually.
