Make the Dough
- In a large bowl, stir together cottage cheese, flour, baking powder, and salt until a shaggy dough forms.
- Turn dough onto a floured surface and knead for 2-3 minutes until soft and pliable with visible cheese specks.
- Divide into 4 balls and roll into round discs about 1/4 inch thick.
- Heat oil in a skillet over medium-high. Cook flatbread for 2 minutes until bubbles form and surface is charred. Flip and cook for 1-2 more minutes.
Notes
Ensure the pan is very hot before adding the dough to get the best charred bubbles.
