Flatbread Ingredients
  • 1 cup Full-Fat Cottage Cheese 225g, do not drain
  • 1.5 cups All-Purpose Flour 190g, plus more for dusting
  • 1.5 teaspoons Baking Powder 7g
  • 0.5 teaspoon Fine Sea Salt 3g
  • 1 tablespoon Olive Oil 15ml, for the pan

Method
 

Make the Dough
  1. In a large bowl, stir together cottage cheese, flour, baking powder, and salt until a shaggy dough forms.
  2. Turn dough onto a floured surface and knead for 2-3 minutes until soft and pliable with visible cheese specks.
  3. Divide into 4 balls and roll into round discs about 1/4 inch thick.
  4. Heat oil in a skillet over medium-high. Cook flatbread for 2 minutes until bubbles form and surface is charred. Flip and cook for 1-2 more minutes.

Notes

Ensure the pan is very hot before adding the dough to get the best charred bubbles.
Use full-fat cottage cheese for a softer, more pliable texture.
