  • 1 cup Cottage Cheese 225g, full-fat preferred
  • 2 large Eggs
  • 1 tsp Garlic Powder 2g
  • 1 tsp Italian Seasoning 2g
  • 1/4 cup Marinara Sauce 60ml
  • 1 cup Mozzarella Cheese 112g, shredded
  • 15 slices Pepperoni Crispy round style
  • 1/2 tsp Dried Oregano Garnish

Equipment

  • 1 High-Speed Blender or Food Processor
  • 1 Baking Sheet
  • 1 White parchment paper Essential for non-stick results

Method
 

Prepare Crust
  1. Combine cottage cheese, eggs, and seasonings in a blender. Process until completely smooth with no curds.
  2. Pour mixture onto a baking sheet lined with white parchment paper. Spread into a thin, even 10-inch circle.
  3. Bake at 400°F (200°C) for 20-25 minutes until the edges are crispy and golden-brown.
Add Toppings
  1. Spread a thin layer of marinara sauce and sprinkle with mozzarella cheese.
  2. Layer pepperoni slices on top. Bake for another 5-8 minutes until cheese is bubbly and pepperoni is crispy.

Notes

Strain cottage cheese if it is very watery to ensure a crispy crust.
Use the broiler for the last minute to get perfect toasted cheese spots.
