Cowboy Stir Fry Ingredients
  • 1 lb Smoked Kielbasa Sausage sliced into 1/2 inch rounds
  • 2 large Russet Potatoes approx 680g, cubed into 1/2 inch pieces
  • 1 medium Red Bell Pepper sliced into strips
  • 1 medium Green Bell Pepper sliced into strips
  • 1 medium Yellow Onion sliced into strips
  • 2 tbsp Avocado Oil or other high-heat oil
  • 1 tsp Sea Salt plus more to taste
  • 1/2 tsp Cracked Black Pepper freshly ground
  • 2 tbsp Fresh Parsley chopped for garnish

Equipment

  • 1 12-inch Cast Iron Skillet Ensures best searing and charred edges.
  • 1 Chef's Knife For uniform dicing.

Method
 

Prep and Sear
  1. Heat oil in a cast iron skillet. Add cubed potatoes in a single layer. Cook undisturbed for 5 minutes, then toss until golden-brown and charred. Season with salt and remove.
  2. Add sausage rounds to the same skillet. Sear on both sides until deeply caramelized. Remove and set aside with potatoes.
  3. Add peppers and onions to the skillet. Stir fry over high heat until onions are translucent and peppers are softened and blistered.
  4. Return potatoes and sausage to the skillet. Toss for 2 minutes. Garnish with fresh parsley and cracked black pepper.

Notes

Use a heavy skillet to ensure the potatoes don't stick.
Don't peel the potatoes; the skins add a great rustic texture and nutrients.
