Ingredients

Burger Patty Mix
  • 1.5 lbs Ground Beef 80/20 chuck (680g)
  • 1/2 cup Crispy Bacon Bits Pre-cooked (120ml)
  • 1/2 cup Sharp Cheddar Cheese 1/4-inch cubes (115g)
  • 1 tsp Kosher Salt
Toppings & Bun
  • 4 units Brioche Buns Toasted
  • 4 large Eggs Fried sunny-side up
  • 8 strips Smoky Bacon Crispy cooked
  • 4 slices Cheddar Cheese Thick slices
  • 1/4 cup Ranch Sauce Opaque white (60ml)
  • 1 tbsp Sesame Seeds Toasted

Equipment

  • 1 Cast Iron Skillet Essential for a deep sear
  • 1 Mixing Bowl

Method

Prepare the Meat
  1. In a bowl, gently fold ground beef, bacon bits, and cheddar cubes. Do not overwork.
  2. Shape into 4 thick patties with a thumbprint in the center.
Cooking
  1. Sear in a hot cast-iron skillet for 4-5 mins per side until dark brown. Top with cheddar slices in the last minute.
  2. Fry eggs in butter until whites are set but yolks are glossy and runny.
Assemble
  1. Layer toasted bun, ranch, patty, bacon strips, and the egg. Top with sesame bun.

Notes

Use 80/20 beef for the best sear and juice.
Don't skip the thumbprint in the middle of the patty; it keeps them flat during cooking.
