  • 1/2 cup Balsamic Vinegar 120ml
  • 3/4 cup Extra Virgin Olive Oil 180ml
  • 2 tbsp Dijon Mustard 30ml
  • 2 tbsp Honey 30ml
  • 1/4 cup Greek Yogurt or Mayonnaise 60ml
  • 2 cloves Garlic Minced
  • 1 tsp Dried Oregano 5ml
  • 1/2 tsp Cracked Black Pepper 2.5ml
  • 1 sprig Fresh Thyme For garnish

Equipment

  • 1 Glass Mason Jar For mixing and storage
  • 1 Whisk To create the emulsion

Method
 

Combine Aromatics
  1. In a medium bowl or mason jar, whisk together the minced garlic, honey, Dijon mustard, oregano, and black pepper until a smooth paste forms.
  2. Stir in the balsamic vinegar and the creamy base (yogurt or mayo) until the mixture is a uniform, dark chocolate-brown color.
Emulsify
  1. Slowly drizzle in the olive oil while whisking constantly. Continue until the dressing is thick and glossy.
  2. Pour into a glass jar and top with a fresh thyme sprig and an extra pinch of cracked black pepper.

Notes

For best results, let the dressing sit for 30 minutes before serving to allow flavors to meld.
If the olive oil solidifies in the fridge, let it sit at room temp for 10 mins then shake.
