  • 1 lb (450g) fresh broccoli florets cut into bite-sized pieces
  • 1 tbsp (15ml) unsalted butter
  • 1 tbsp (15ml) extra virgin olive oil
  • 4 cloves garlic minced
  • 3/4 cup (180ml) heavy cream
  • 1/2 cup (50g) Parmesan cheese finely grated
  • 1/2 tsp (2.5g) black pepper freshly cracked
  • 1/4 tsp red pepper flakes dried

Method
 

Prepare the Broccoli
  1. Steam broccoli florets for 2-3 minutes until bright green. Drain and pat dry thoroughly with paper towels.
  2. Heat oil and butter in a skillet over medium-high heat. Add broccoli and sear without stirring for 2 minutes to achieve charred edges.
Make the Sauce
  1. Add minced garlic to the center of the pan and sauté for 30-45 seconds until aromatic.
  2. Pour in heavy cream. Simmer for 2-3 minutes until the sauce reduces and becomes glossy.
  3. Stir in grated Parmesan, black pepper, and red pepper flakes. Toss to coat the broccoli completely in the thick sauce.

Notes

Ensure broccoli is completely dry before charring to avoid steaming.
Use freshly grated Parmesan for the smoothest sauce texture.
