Prepare the Gnocchi
- Heat a large skillet over medium-high heat with 1 tbsp butter. Add gnocchi in a single layer and sear for 2-3 minutes until golden-brown edges appear. Flip and sear the other side.
- Reduce heat to medium. Add remaining butter and garlic; sauté for 1 minute. Pour in heavy cream and bring to a simmer. Whisk in parmesan cheese until a thick glossy sauce forms.
- Add gnocchi back to the pan and toss to coat. Garnish with parsley, extra parmesan, and red pepper flakes. Serve immediately.
Notes
Do not boil the gnocchi beforehand; pan-searing gives the best texture.
