  • 4 large flour tortillas 10-inch / 25cm size
  • 1/2 tsp garlic powder 2g
  • 2 tbsp unsalted butter 30g
  • 1 packet au jus gravy mix 28g
  • 2 cups beef broth 475ml
  • 1 tbsp fresh parsley 4g, finely chopped for garnish

Method
 

Step-by-Step Instructions
  1. In a small saucepan, whisk together the au jus gravy mix and beef broth. Bring to a boil over medium-high heat, then reduce to a simmer for 3 to 5 minutes until dark and slightly thickened. Keep warm.
  2. Lay tortillas flat and place 2 slices of provolone on each. Top evenly with the shredded beef and sprinkle with garlic powder. Fold the sides inward and roll up tightly like a burrito.
  3. Melt butter in a large skillet over medium heat. Place roll ups seam-side down and cook for 2 to 3 minutes per side until deeply golden-brown and the cheese is dripping and melted.
  4. Transfer to a cutting board, let rest for 2 minutes, then slice in half diagonally. Garnish with chopped fresh parsley and serve immediately with the warm au jus for dipping.

Notes

Warm your tortillas in the microwave for 15 seconds prior to rolling to prevent tearing.
Ensure the seam-side goes into the pan first so the roll ups seal shut.
