Preparation
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment. Slice the polenta log into circular yellow rounds exactly 0.5 inches thick.
- Brush both sides of the rounds with olive oil. Bake for 15-20 minutes until the bottoms are golden and the edges are starting to crisp.
- Flip the rounds, top with shredded parmesan, and bake for another 10 minutes until the cheese is melted and slightly toasted tan.
- Garnish with fresh parsley and black pepper while the cheese is hot. Arrange in an overlapping line on a grey plate.
