  • 3-4 tbsp extra virgin olive oil 45-60ml
  • 1 tsp kosher salt 5g
  • 1/2 tsp black pepper 2g, coarsely ground
  • 1 tsp garlic powder 3g
  • 1/4 cup fresh flat-leaf parsley 15g, finely chopped for garnish

  • 1 Large Rimmed Baking Sheet Dark metal preferred for better browning.
  • 1 Large Mixing Bowl

Preparation
  1. Preheat your oven to 425°F (220°C). Wash the cauliflower and dry it thoroughly with a kitchen towel to ensure maximum crispiness.
  2. Break the cauliflower into bite-sized florets, ensuring many pieces have a flat side for better pan contact.
Cooking
  1. In a large bowl, toss florets with olive oil, salt, pepper, and garlic powder until every crevice is coated.
  2. Spread florets on a baking sheet in a single layer. Roast for 25-30 minutes, flipping halfway through, until edges are charred and golden.
  3. Remove from oven, transfer to a bowl, and toss with fresh parsley before serving.

Notes

For extra flavor, add a squeeze of lemon juice right before serving.
Ensure the pan isn't crowded or the cauliflower will steam instead of roast.
