  • 1/2 cup (120ml) Sun-Dried Tomatoes Julienned, packed in oil
  • 1 cup (240ml) Heavy Cream
  • 1/2 cup (45g) Parmesan Cheese Freshly grated
  • 3 cloves Garlic Minced
  • 1 tsp (5ml) Dried Oregano
  • 1/2 tsp (2.5ml) Red Pepper Flakes
  • 1 cup (240ml) Chicken Broth Low-sodium
  • 1/4 cup Fresh Parsley Chopped for garnish
  • 1/2 tsp Cracked Black Pepper

Method
 

Preparation
  1. In the slow cooker, whisk together chicken broth, garlic, oregano, red pepper flakes, and a tablespoon of oil from the sun-dried tomato jar.
  2. Place whole chicken breasts into the slow cooker, ensuring they are partially submerged in the liquid.
Slow Cooking
  1. Cover and cook on LOW for 4 hours until chicken is tender.
Finishing the Sauce
  1. Stir in heavy cream, grated parmesan, and julienned sun-dried tomatoes. Cover and cook for an additional 30 minutes until the sauce is thick and orange-hued.
  2. Top with freshly chopped parsley and cracked black pepper before serving.

Notes
