  • 12 oz thin wheat noodles 340g
  • 2 tbsp vegetable oil 30ml
  • 1 cup carrots 120g, julienned
  • 2 cups green cabbage 150g, shredded
  • 1 cup bean sprouts 100g, fresh
  • 3 tbsp soy sauce 45ml
  • 1 tbsp dark soy sauce 15ml
  • 1 tsp sesame oil 5ml
  • 1/2 cup green scallions chopped
  • 1 tsp toasted sesame seeds

Equipment

  • 1 Wok or Large Skillet High heat is essential.
  • 1 White Ceramic Bowl For serving.

Method
 

Preparation
  1. Boil wheat noodles for 1 minute less than package directions. Drain and rinse with cold water.
  2. Whisk together soy sauce, dark soy sauce, and sesame oil in a small bowl.
Cooking
  1. Heat oil in a wok. Stir-fry carrots and cabbage for 2-3 minutes until slightly softened but vibrant.
  2. Add noodles to the pan. Let sit for 60 seconds to develop charred edges, then toss with the sauce.
  3. Add bean sprouts and toss for 60 seconds. Garnish with scallions and sesame seeds.

Notes

Use a very hot pan to get those charred edges.
Dark soy sauce is essential for the deep brown color.
