Ingredients
  

Bowl Components
  • 1 lb Ground Pork or Beef 454g; high fat content preferred for searing
  • 6 cups Shredded Green Cabbage 450g; fresh and thinly sliced
  • 1 cup Carrot Matchsticks 100g
  • 1/4 cup Soy Sauce 60ml; or Tamari for gluten-free
  • 1 tbsp Fresh Ginger 15g; finely grated
  • 2 cloves Garlic minced
  • 1 tsp Toasted Sesame Oil 5ml
  • 1/4 cup Green Onions 25g; sliced, whites and greens separated
  • 1 tbsp Sesame Seeds 8g; mix of black and white
  • 2 tbsp Mayonnaise 30g
  • 1 tsp Sriracha 5ml

Equipment

  • 1 Large Skillet or Wok High heat capacity is best.
  • 1 Whisk For the sriracha mayo.

Method
 

The Perfect Sear
  1. Heat a skillet over medium-high heat with oil. Brown the meat crumbles without moving them for 2-3 minutes to get a charred texture.
  2. Add garlic, ginger, and green onion whites to the pan. Sauté for 1 minute until fragrant.
  3. Add cabbage and carrots. Sauté for 3-4 minutes until wilted but bright. Pour in soy sauce and sesame oil; stir until glossy.
  4. Top with green onion tops, black and white sesame seeds, and a drizzle of sriracha mayo.

Notes

Use a very hot pan for the best meat texture.
Dry your cabbage thoroughly before cooking to prevent sogginess.
