  • 1.5 lbs Pink Gulf Shrimp Peeled and deveined (680g)
  • 1 small Yellow Onion Diced (approx 150g)
  • 0.5 cup Green Bell Pepper Diced and softened (75g)
  • 4 tbsp Unsalted Butter 56g
  • 0.25 cup All-purpose Flour 30g
  • 1.5 cups Whole Milk 360ml
  • 0.5 cup Heavy Cream 120ml
  • 1 cup Monterey Jack Cheese Shredded (115g)
  • 1 package Double Pie Crust Refrigerated or homemade
  • 1 pinch Paprika & Parsley For garnish

  • 1 White ceramic baking dish 9-inch pie plate
  • 1 Large Skillet

Method
 

Sauté Aromatics
  1. Melt butter in a large skillet over medium heat. Sauté diced onions and green peppers until translucent and softened.
  2. Add the large pink Gulf shrimp to the skillet. Cook for 2-3 minutes until they begin to turn pink but are not fully cooked.
Create the Filling
  1. Sprinkle flour over the shrimp and veg. Stir for 1 minute. Slowly whisk in milk and heavy cream.
  2. Simmer until the sauce is thick and opaque. Stir in the shredded white cheese until melted.
Bake the Pie
  1. Pour filling into a bottom crust-lined white ceramic dish. Top with the second crust and create crimped edges.
  2. Cut vents in the top crust and bake at 400°F (200°C) for 30-35 minutes until the pastry is flaky and golden-brown.

Notes

Ensure shrimp are patted dry to avoid a runny sauce.
Rest the pie for 10 minutes after baking for perfect slices.
