Ingredients
  

Shrimp and Sauce
  • 1 lb (450g) Large Shrimp Peeled and deveined
  • 4 tbsp (60g) Unsalted Butter Divided
  • 1 tbsp (15ml) Extra Virgin Olive Oil
  • 6 cloves Fresh Garlic Finely minced
  • 1/4 cup (10g) Fresh Italian Parsley Chopped
  • 1 tbsp (15ml) Lemon Juice Freshly squeezed

Equipment

  • 1 Cast Iron Skillet Black cast iron provides the best sear.
  • 1 Chef's Knife For mincing garlic and parsley.

Method
 

Preparation and Searing
  1. Pat the shrimp dry with paper towels to ensure a golden-brown sear. Season with salt and pepper.
  2. Heat oil in a cast iron skillet over medium-high heat. Add shrimp in a single layer and cook for 90 seconds per side until pink and seared on the edges.
  3. Lower heat to medium, add butter and minced garlic. Stir for 1 minute until butter is glossy and garlic is fragrant.
  4. Stir in lemon juice and parsley. Toss to coat shrimp in the translucent yellow sauce and serve immediately.

Notes

Use a heavy skillet to get the best sear without overcooking the centers.
Do not use jarred garlic; the flavor and texture will be significantly different.
