Method
 

Potato Preparation
  1. Toss halved baby potatoes with olive oil, salt, and pepper. Roast at 400°F (204°C) for 20-25 minutes until golden and crispy.
Steak Searing
  1. Pat steak bites dry. Sear in a hot skillet with olive oil for 2 minutes per side until a deep brown crust forms.
  2. Lower heat, add butter and garlic. Baste the steak for 1 minute until glossy. Toss in potatoes to coat.

Notes

Always pat the steak dry with paper towels to ensure a perfect sear.
Roast potatoes cut-side down for the best golden-brown color.
