  • 1.5 lbs Chicken Breast cut into bite-sized pieces (680g)
  • 3 tbsp Olive Oil (45ml)
  • 1 tbsp Dried Oregano (5g)
  • 4 cloves Garlic minced
  • 2 tbsp Lemon Juice (30ml)
Tzatziki Sauce
  • 1 cup Greek Yogurt Full fat preferred (245g)
  • 0.5 large Cucumber grated and squeezed dry (150g)
Assembly
  • 4 pieces Pita Bread Greek-style thick pitas
  • 0.5 large Red Onion thinly sliced
  • 2 medium Red Tomatoes diced
  • 0.25 cup Fresh Parsley chopped

Equipment

  • 1 Cast Iron Skillet For searing the chicken
  • 1 Box Grater For the cucumber

Method
 

Preparation
  1. Combine chicken pieces with olive oil, lemon juice, garlic, and dried oregano. Let sit for at least 20 minutes.
  2. Grate cucumber and squeeze out all liquid. Mix with yogurt, lemon juice, and a pinch of salt until thick and opaque.
Cooking and Assembly
  1. Cook chicken in a hot skillet for 3-5 minutes per side until dark golden sear marks and herb flecks are visible.
  2. Warm the pitas in a pan until soft and toasted.
  3. Layer chicken, tzatziki, onions, tomatoes, and parsley onto the warm pita and serve immediately.

Notes

For the best sear, do not move the chicken pieces for the first 3 minutes of cooking.
Always squeeze the cucumber in a cheesecloth to prevent watery tzatziki.
