Preparation
- Combine chicken strips, lemon juice, olive oil, garlic, and 2 tsp of oregano in a bowl. Marinate for 30 minutes.
- Grate 1 cup (150g) cucumber and squeeze out all liquid using a kitchen towel. Mix with yogurt, dill, and a pinch of salt.
Cooking & Assembly
- Heat a skillet over medium-high. Sear chicken strips for 3-5 minutes per side until dark caramelized edges form.
- Lightly brush pitas with oil and toast in a pan for 30 seconds until golden spots appear.
- Spread tzatziki on pita. Top with chicken, red onions, tomatoes, and sliced cucumbers. Garnish with parsley and remaining oregano.
Notes
Always squeeze the cucumber moisture out for thick tzatziki.
