Greek Chicken Gyros with Creamy Homemade Tzatziki Sauce

  • 1.5 lbs Chicken Breast 680g, sliced into thin strips
  • 3 tbsp Lemon Juice 45ml, freshly squeezed
  • 1/4 cup Extra Virgin Olive Oil 60ml
  • 4 cloves Garlic minced
  • 1 tbsp Dried Oregano divided use
  • 1.5 cups Greek Yogurt 350g, full fat preferred
  • 1 cup English Cucumber 150g, grated and squeezed dry
  • 2 tbsp Fresh Dill 10g, finely chopped
  • 4 pieces Pita Bread thick, Greek-style
  • 1 cup Tomatoes diced
  • 1/2 small Red Onion thinly sliced
  • 1/2 cup Cucumber sliced into half-moons
  • 2 tbsp Fresh Parsley chopped for garnish

Equipment

  • 1 Cast Iron Skillet Ensures the best char on the chicken.
  • 1 Box Grater For grating the cucumber.

Method
 

Preparation
  1. Combine chicken strips, lemon juice, olive oil, garlic, and 2 tsp of oregano in a bowl. Marinate for 30 minutes.
  2. Grate 1 cup (150g) cucumber and squeeze out all liquid using a kitchen towel. Mix with yogurt, dill, and a pinch of salt.
Cooking & Assembly
  1. Heat a skillet over medium-high. Sear chicken strips for 3-5 minutes per side until dark caramelized edges form.
  2. Lightly brush pitas with oil and toast in a pan for 30 seconds until golden spots appear.
  3. Spread tzatziki on pita. Top with chicken, red onions, tomatoes, and sliced cucumbers. Garnish with parsley and remaining oregano.

Notes

Always squeeze the cucumber moisture out for thick tzatziki.
Use high heat for the chicken to get those charred edges.
