Ingredients

Main Ingredients
  • 1.5 lbs Chicken Breast 680g, sliced into thin strips
  • 3 tbsp Extra Virgin Olive Oil 45ml
  • 1 large Lemon Juiced
  • 3 cloves Garlic Minced
  • 2 tsp Dried Oregano 2g
  • 1 cup Greek Yogurt 245g, full-fat preferred
  • 1/2 large English Cucumber Grated and squeezed dry
  • 1 tbsp Fresh Dill 4g, finely chopped
  • 4 pieces Pita Bread Thick, pocketless style
  • 1 cup Fresh Tomatoes 150g, diced
  • 1/2 small Red Onion Thinly sliced

Equipment

  • 1 Cast Iron Skillet Or an outdoor grill
  • 1 Box Grater For the cucumber
  • 1 Kitchen Towel To squeeze cucumber moisture

Method

Preparation
  1. Whisk olive oil, lemon juice, garlic, and oregano in a bowl. Add chicken strips, coat well, and marinate for 30 minutes to 2 hours.
  2. Grate cucumber and squeeze dry in a towel. Mix with Greek yogurt, dill, and a pinch of salt. Refrigerate until needed.
  3. Heat a skillet over medium-high heat. Cook chicken strips for 3-4 minutes per side until charred and cooked through (165°F/74°C).
  4. Warm pitas in a dry pan or over a gas flame until slightly charred and flexible.
  5. Spread tzatziki on pita, add chicken, tomatoes, onions, and fresh parsley. Fold and serve.

Notes

Always squeeze the cucumber dry to prevent a watery sauce.
Use high heat for the chicken to get those crispy, browned edges.
