Greek Chicken Gyros with Creamy Tzatziki and Charred Pita

Main Ingredients
  • 1.5 lbs Chicken Breast cut into thin strips (680g)
  • 3 tbsp Olive Oil divided (45ml)
  • 1 large Lemon juiced
  • 3 cloves Garlic minced
  • 2 tsp Dried Oregano divided
  • 1 cup Greek Yogurt full fat preferred (245g)
  • 1/2 large Cucumber grated and squeezed dry
  • 1 tbsp Fresh Dill chopped
  • 4 Pita Breads thick, pocketless style
  • 1 cup Cherry Tomatoes diced (150g)
  • 1/2 Red Onion thinly sliced

Equipment

  • 1 Cast Iron Skillet Essential for getting a good sear on the chicken.
  • 1 Box Grater Used for the cucumber in the tzatziki.

Method
 

Preparation
  1. In a bowl, combine chicken strips, 2 tbsp olive oil, lemon juice, garlic, and 1 tsp oregano. Marinate for 30 minutes.
  2. Mix Greek yogurt, grated/squeezed cucumber, dill, and a pinch of salt. Chill until ready to serve.
  3. Heat remaining oil in a skillet over medium-high. Sear chicken in batches for 3-4 mins per side until crispy and browned.
  4. Wipe skillet. Toast pitas for 45 seconds per side until light char marks appear.
  5. Spread tzatziki on warm pita. Top with chicken, tomatoes, onions, and remaining cucumber cubes. Garnish with oregano.

Notes

Ensure the pan is very hot before adding chicken to get those crispy, browned edges.
Always squeeze the water out of your grated cucumber to prevent a runny sauce.
