Ingredients

Chicken & Marinade
  • 1.5 lbs Chicken Breast sliced into thin strips
  • 3 tbsp Olive Oil extra virgin
  • 2 tbsp Lemon Juice freshly squeezed
  • 1 tbsp Dried Oregano
  • 3 cloves Garlic minced
Creamy Tzatziki
  • 1.5 cups Greek Yogurt full fat preferred
  • 0.5 cup Cucumber grated and squeezed dry
  • 2 tbsp Fresh Dill chopped
Assembly & Toppings
  • 4 Pita Breads charred
  • 1 cup Red Tomatoes diced
  • 0.5 cup Red Onion sliced half-moons
  • 0.5 cup Green Cucumber cubed

Equipment

  • 1 Cast Iron Skillet For achieving the perfect sear.
  • 1 Box Grater For the cucumber in the tzatziki.

Method

Prepare the Chicken
  1. Whisk olive oil, lemon juice, oregano, and garlic. Toss with sliced chicken and marinate for 30 minutes.
  2. Heat a skillet over medium-high heat. Sear chicken in batches until golden-brown and cooked through (about 7-8 minutes total).
Make the Sauce
  1. Grate the cucumber and use a towel to squeeze out all excess moisture.
  2. Combine yogurt, squeezed cucumber, and fresh dill. Stir until thick and creamy.
Final Assembly
  1. Warm pitas over an open flame or in a dry pan until lightly charred.
  2. Spread tzatziki on pita, add chicken, onions, tomatoes, and cubed cucumbers. Garnish with parsley and oregano.

Notes

Always squeeze the cucumber dry to prevent watery sauce.
Char the pita just before serving for the best texture.
