Main Recipe
  • 1.5 lbs Chicken Breast or Thighs cut into 1-inch pieces
  • 1/3 cup Extra Virgin Olive Oil
  • 3 tbsp Fresh Lemon Juice
  • 4 cloves Garlic minced
  • 2 tsp Dried Oregano Flakes
  • 1 tsp Kosher Salt
  • 1/2 tsp Black Pepper coarse
Platter Components
  • 1 cup Cucumbers sliced
  • 1 cup Cherry Tomatoes halved
  • 1/2 cup Tzatziki Sauce thick and creamy
  • 2 pieces Pita Bread toasted

Equipment

  • 1 Grill or Grill Pan
  • 8 Skewers Metal or soaked wooden

Method
 

Prepare the Chicken
  1. Whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper in a large bowl.
  2. Add chicken pieces to the marinade and toss to coat thoroughly. Refrigerate for 30 minutes to 4 hours.
Grill and Assemble
  1. Thread the marinated chicken onto skewers, leaving a small gap between pieces.
  2. Grill over medium-high heat for 4-5 minutes per side until charred and cooked through (165°F).
  3. Serve on a platter with sliced cucumbers, tomatoes, red onions, tzatziki, and toasted pita.

Notes

Do not over-marinate beyond 4 hours as the lemon juice will change the chicken's texture.
Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
