  • 1.5 lbs Chicken Breasts Boneless, skinless, pounded to 3/4 inch
  • 1/4 cup Extra Virgin Olive Oil (60ml)
  • 3 tbsp Fresh Lemon Juice (45ml)
  • 4 cloves Garlic minced
  • 2 tbsp Dried Oregano Flakes (6g), divided
  • 1/4 cup Fresh Parsley (15g), finely chopped
  • 1 wedge Lemon for serving

  • 1 White Ceramic Bowl For presentation

Method
 

Preparation
  1. Whisk olive oil, lemon juice, garlic, and 1 tbsp oregano. Marinate chicken for 30 mins to 4 hours.
  2. Preheat grill to 400°F (200°C). Grill chicken for 5-7 minutes per side until 165°F (74°C) internal.
  3. Let chicken rest for 8 minutes. Slice into even pieces and place in a white ceramic bowl.
  4. Dust with remaining oregano and fresh parsley. Garnish with a lemon wedge.

Notes

Ensure the grill is very hot for dark char marks.
Don't over-marinate or the lemon will make the chicken rubbery.
