Ingredients

Ingredients
  • 1.5 lbs Chicken Breast Cut into 1.25-inch cubes (680g)
  • 1 large Red Onion Cut into petals/wedges
  • 2 medium Zucchini Sliced into 1/2-inch rounds (green)
  • 2 large Red Bell Peppers Cut into 1-inch squares
  • 0.5 cup Extra Virgin Olive Oil (120ml)
  • 0.25 cup Lemon Juice (60ml) freshly squeezed
  • 4 cloves Garlic Minced
  • 2 tbsp Dried Oregano (6g)
  • 1 tsp Salt and Black Pepper To taste
  • 0.25 cup Fresh Parsley Finely chopped for garnish

Equipment

  • 8 Wooden Skewers Soaked in water for 30 minutes
  • 1 Grill or Grill Pan

Method

Preparation
  1. In a large bowl, whisk olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken cubes and toss to coat. Marinate for 30 minutes.
  2. Submerge wooden skewers in water for 30 minutes to prevent burning.
Assembly & Cooking
  1. Thread chicken, onion petals, zucchini rounds, and pepper squares onto skewers, leaving slight space between items for air circulation.
  2. Heat grill to medium-high. Grill skewers for 3-4 minutes per side until chicken has dark grill marks and internal temp is 165°F.
  3. Remove from heat, let rest for 5 minutes, and sprinkle with fresh parsley and extra dried oregano for a glossy, herb-infused finish.

Notes

Do not over-marinate beyond 6 hours or the lemon juice will compromise the chicken texture.
Ensure the grill is preheated to achieve blistered pepper skins.
