  • 1 cup (185g) White Rice Dry
  • 1 lb (450g) Large Shrimp Peeled and deveined
  • 1 tsp Dried Oregano Or Mediterranean herb blend
  • 1 cup (150g) Cherry Tomatoes Halved
  • 1 large (300g) English Cucumber Sliced
  • 1/4 cup Red Onion Thinly sliced
  • 1/2 cup (65g) Kalamata Olives Pitted
  • 1/2 cup (75g) Feta Cheese Crumbled
  • 2 tbsp Fresh Dill Chopped
  • 1/4 cup (60ml) Extra Virgin Olive Oil
  • 1 large Lemon Juiced

  • 1 Large Skillet For searing shrimp
  • 1 Medium Saucepan For steaming rice

Method
 

Preparation
  1. Rinse rice and combine with 2 cups water in a saucepan. Bring to boil, simmer for 15 minutes. Let rest for 5 minutes then fluff.
  2. Whisk olive oil, lemon juice, garlic, and oregano together until emulsified.
  3. Pat shrimp dry. Season with herbs. Heat oil in skillet and sear for 2 minutes per side until golden marks appear.
  4. Divide rice into bowls. Arrange shrimp, cucumber, tomatoes, onions, olives, and feta in sections. Drizzle with dressing and garnish with dill.

Dry the shrimp thoroughly to ensure a perfect sear.
