Ingredients
  

Herb-Infused Turkey Meatballs
  • 1 lb ground turkey 93% lean
  • 1/4 cup fresh parsley finely chopped
  • 1 tsp dried oregano
  • 2 cloves garlic minced
  • 1/4 cup breadcrumbs panko or plain
  • 1 egg large
  • 2 tbsp olive oil for frying
Bowl Components
  • 2 cups white rice cooked and fluffy
  • 1 cup cucumber sliced crisp
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/2 cup feta cheese cubed white
  • 12 kalamata olives pitted
  • 1/2 cup tzatziki sauce thick and creamy

Equipment

  • 1 Large Skillet For searing meatballs
  • 1 Mixing Bowl For meatball mixture

Method
 

Make the Meatballs
  1. In a large bowl, combine turkey, parsley, oregano, garlic, breadcrumbs, and egg. Fold gently to combine.
  2. Roll into golf-ball sized meatballs. Heat oil in a skillet and sear until golden-brown and cooked through (165°F).
Assemble the Bowls
  1. Distribute fluffy cooked rice into four bowls.
  2. Arrange meatballs, cucumbers, tomatoes, and onions in sections. Add feta and olives.
  3. Top with a dollop of tzatziki and a sprinkle of fresh parsley.

Notes

Squeeze excess water from grated cucumber for the tzatziki to prevent sogginess.
Don't overmix the turkey or the meatballs will be tough.
