  • 3 pieces Thick-cut Pork Chops 1.5 inches (3.8cm) thick
  • 1/2 cup Dark Brown Sugar 110g
  • 1 tablespoon Kosher Salt 15g
  • 1 tablespoon Cracked Black Pepper 6g
  • 2 tablespoons Apple Cider Vinegar 30ml
  • 1/4 cup Fresh Parsley 15g, finely chopped

  • 1 Meat Thermometer Instant-read preferred

Method
 

Preparation
  1. Pat pork chops dry with paper towels. Mix brown sugar, salt, and half the pepper in a bowl. Rub onto all sides of the chops.
  2. Preheat grill to 400°F (200°C) and lightly oil the grates.
Grilling
  1. Place chops on the grill. Sear for 5-6 minutes per side to develop dark charred grill marks.
  2. Mix remaining sugar with apple cider vinegar. Brush onto the chops during the last 3 minutes of cooking until amber and glossy.
  3. Remove when internal temp is 145°F (63°C). Rest for 5-8 minutes. Garnish with parsley and remaining black pepper.

Notes

Always use a meat thermometer to prevent overcooking.
Apply the glaze in the final minutes to avoid burning the sugars.
