Preparation
- Pat pork chops dry with paper towels. Mix brown sugar, salt, and half the pepper in a bowl. Rub onto all sides of the chops.
- Preheat grill to 400°F (200°C) and lightly oil the grates.
Grilling
- Place chops on the grill. Sear for 5-6 minutes per side to develop dark charred grill marks.
- Mix remaining sugar with apple cider vinegar. Brush onto the chops during the last 3 minutes of cooking until amber and glossy.
- Remove when internal temp is 145°F (63°C). Rest for 5-8 minutes. Garnish with parsley and remaining black pepper.

Always use a meat thermometer to prevent overcooking.
