Ingredients

Main Ingredients
  • 1 lb Ground Beef 80/20 lean recommended
  • 1 packet Taco Seasoning Or 2 tbsp homemade blend
  • 4 large Flour Tortillas 10-inch size
  • 1 cup (112g) Shredded Mozzarella Cheese
  • 1 cup (112g) Sharp Orange Cheddar Cheese Reserve some for the exterior crust
  • 1 tbsp (15ml) Butter or Oil For searing

Equipment

  • 1 Large Skillet Non-stick or cast iron works best.
  • 1 Wooden spoon

Method

Prepare the Beef
  1. In a large skillet over medium-high heat, brown the ground beef until no pink remains, breaking it into small crumbles.
  2. Drain excess fat. Add taco seasoning and 1/4 cup water. Simmer for 3-5 minutes until the liquid is absorbed.
Assemble and Grill
  1. Lay tortillas flat. Add a layer of cheddar, the seasoned beef, and mozzarella in the center. Fold sides in and roll tightly.
  2. Heat oil in a skillet. Place burrito seam-side down. Cook for 2 minutes until golden brown with dark patches.
  3. Flip the burrito. Sprinkle reserved cheddar in the pan, place the burrito on top, and press down until the cheese forms a crispy crust.

Notes

Make sure the beef is drained well to prevent a soggy burrito.
Use a heavy press for the most even toasted patches.
