  • 2 rolls Ciabatta Buns Flour-dusted variety preferred
  • 2 breasts Chicken Breast Approx 8oz (225g) each
  • 4 slices Bacon Thick-cut, cooked until crispy
  • 2 slices Pepper Jack Cheese With visible red pepper flecks
  • 1/2 cup Mayonnaise 120ml
  • 1 tbsp Chipotle in Adobo Finely minced
  • 1 cup Arugula Fresh green leaves

Equipment

  • 1 Grill or Grill Pan Used for the chicken and toasting bread.
  • 1 Meat Mallet For pounding chicken to even thickness.

Method
 

Preparation
  1. Mix mayonnaise and chipotle peppers in a small bowl. Set aside for flavors to blend.
  2. Season chicken and grill over medium-high heat until internal temp is 165°F (74°C). Top with pepper jack cheese in the last minute of cooking to melt.
  3. Slice ciabatta buns and toast on the grill or in a pan until edges are golden-brown.
  4. Layer bottom bun with arugula, cheesy grilled chicken, two strips of bacon, a drizzle of chipotle mayo, and the top bun.

Notes

Pound the chicken breasts to an even thickness for the best grill marks.
Use a meat thermometer to ensure chicken is juicy but safe at 165°F.
